Savor Fall with Al Roker’s Bourbon Apple Pie Milkshake from Recipes to Live By
There’s nothing quite like fall on the Connecticut shoreline: the crisp air, the changing leaves, and, of course, the flavors of the season. From warm apple cider to pumpkin pie, the Shoreline is a treasure trove for food lovers this time of year. And now, thanks to Recipes to Live By by Al Roker, we’ve got a new fall favorite that captures all that autumn goodness in a glass: the Bourbon Apple Pie Milkshake.
Roker, best known for his role as a weatherman on NBC's Today, is also a passionate home cook. His cookbook brings together his favorite recipes for enjoying the good life, and this milkshake is no exception. A decadent twist on a classic dessert, it combines all the flavors of apple pie with a grown-up kick of bourbon. Perfect for sipping by the fire or sharing with friends, this milkshake is a celebration of fall in every sense.
Al Roker’s Bourbon Apple Pie Milkshake
Serves 2
Ingredients
1 pint vanilla ice cream
½ cup canned apple pie filling
⅔ cup whole milk, plus more if needed
1½ oz. bourbon
6 whole vanilla wafers, plus ¼ cup crushed wafers
Store-bought caramel sauce, for topping
Instructions
Combine the ice cream, pie filling, milk, bourbon, and whole vanilla wafers in a blender and blend until smooth. (Alternatively, you can use an immersion blender in a sturdy quart-size container.) If the mixture is too thick, add a dash more milk.
Pour into two chilled glasses, top each with half of the crushed vanilla wafers, and drizzle with caramel sauce. Serve with a tall spoon or a straw.
